Truffles and France




In my last post I mentioned truffles and truffle oil.  Someone asked what a truffle was.  It is not a mushroom, but it is a fungi.  They grow beneath the ground near roots of specific types of trees.  They can cost $250-$450 a pound!

The are very potent in flavor and smell, so a tiny little shaving can go a long way in flavoring a dish.

While in France we went to a truffle farm.  Truffles are harvested in Europe by pigs or specially trained dogs.

Meet Lady...

Lady was the specially trained Truffle dog at the farm we went to.

The man in the picture below is the 3rd generation of Truffle farmers on this farm.  He is holding a truffle in his hands.

This is the actual truffle farm.  These are the trees that the Truffle grow near.

And below is Lady, doing her job.  Yes, she did find the Truffle.  She ran around sniffing at all of the tree roots and then started digging like crazy.  When she found the truffle, she stopped and the owner gave her a treat.


It was a very interesting tour.
